Good way to capture VHS/LD footage?
I need to capture some footage from a VCR player and a Laser Disc player, does anyone have good advice for how to do that?
I'm currently working with someone to redo our Toei Yu-Gi-Oh anime subs, but this tech can be used for other stuff too

Basically what you need is a capture card that accepts the best outputs from your devices. The odds are that's going to be RCA video (yellow), but the LaserDisc player may also do S-Video.
There are both internal and external capture devices. The external ones tend to capture directly to H.264. The internal ones tend to capture raw, or can select between that and H.264.
Arguably the "best" setup would be an internal capture card capturing raw, then editing that down and encoding to H.264. But an external box is going to be pretty dang convenient. And I doubt your sources are terribly high quality to begin with.

Is there a specific software/hardware combo that people use that would be good? I'd like to do the best possible job with this at possible, since it's going out to the public

This would be the best device to capture it with. Then you can just record it using something as simple as OBS. Then take that file and trim it up nicely in your choice of Adobe.

What are your player video outputs? Most stereo VHS players had left/right/composite (yellow) outputs, and SuperVHS players had S-video outputs. Don't know about laserdiscs, but if you know what the outputs are, then you can find the proper device.

First of all you'll need SCART connection from your VHS device because it output RGB
which is much better than analog RCA either via SCART capable VHS or via a SCART converter,
If you choose SCART converter you might as well pick an upscaler SCART converter to at least 1080P
then the capture card you have two option either pick a SCART capture that mux audio and video automatically
to H.264 or H.265 or capture Raw video only and record separate audio and mix and clean it then MUX it to video
make sure that video and audio timing are match which are hella more hard work but ensure synchronization.

Pretty sure I have a LD player and VHS player that can do Svideo output. Is SCART available in America? I've never heard of that connection before

as the video in previous post SCART are an old tech but still easy
to find a convert box on ebay and a lot better than RCA and S-video
is an old component connection which output 240i or if lucky 480P
so convert it to SCART then use external video processor to upscale it then capture.

SCART is generally only found in high-end European equipment. It is not a standard that was meaningfully used in the US.

So it would certainly simplify the process. You wouldn't need to use a separate converter when importing from VHS.
But the presence of an HDMI output doesn't mean that the analog-to-digital converter hardware within the tape deck is any good. It's possible to have a tape deck with a sub-par converter. So you'd want to check reviews on the device to see if it's any good.
