So, here's a Japanese version of the -ings thing.
To create delicious soba, you need the four "-tate".
取れたて toretate (freshly harvested / harvesting)
ひきたて hikitate (freshly ground / grinding)
打ちたて uchitate (cutting)
ゆでたて yudetate (boiling)
I didn't want to undertranslate it by just simply saying "the four conditions", or make it way too long with a TL, so I used an English equivalent.
