I haven't started watching it yet. I am a huge fan of the manga though. How far are they going to go? I know up to the end of part 2 is planned, but I imagine that from part 4 onwards, it might get a bit dull to watch.

Well judging from the epic CG opening from episode 2 on, I think they plan to go all the way to Steel Ball Run. And honestly, there's nothing dull about trying to save the life of a mafia boss's daughter, a jail of super powered women, or a horse race from one side of America to the other. I'm staying with this series till the end, if there's an end.

It's more I'm worried about the attrition because of the similarity of the plots. Between parts 1, 2 and 3, they are all different enough to keep it fresh. 4 is kind of boring, only picking it up a bit against Kira (even then, Jouske vs Kira is no Jotaro vs Dio). Part 5 is part 3 in Italy (and is pretty much all about Buccellati anyway). 6 is pretty boring up until the jailbreak. Don't get me started on SBR.
