It's actually as simple as a pun as it could be: 'chicken' is a synonym for 'scared' or 'easily scared'.

They took the mature and diligent one and made him literally lose his cool, the energetic one and made her faint without energy and the tough and straightforward one a 'chicken', scared by actual chikens.

It's a common clichè/trope used quite often to make characters feel less rigid in their roles.

There are a lot of other ways besides freezing up that people express fear. Running away, crying, shaking, etc.

But Colloson doesn't do any of those: he freezes up, just like Hiromu.

Plus, I don't think Colloson was supposed to be afraid, so much as it was that showing him a chicken is just a way of shutting him down... like a computer. Don't forget, the Go-Busters' weak points fit in with the whole technology theme, they're basically supposed to be glitches. Hiromu even makes hard drive noises when he's frozen, and Ryuji's voice gets all staticy when he overheats.

Either it's just a strange coincidence or somebody at Toei watched That Mitchell and Webb Look, I don't think it's some common trope or play on words or whatever.

It doesn't need to, it's the joke that can get across the cultural barrier since it's easy to understand.

Games of chicken, someone being called a 'chicken' instead of 'idiot' etc is stuff that you can find almost everywhere, translated or not.

PS:
There's also the fact that chickens (and goats too) when scared can really freeze on the spot.
