Gotta love it when a series becomes so long that the themes and story are totally different. I guess the animatino has become more detailed, but maybe not necessarily better. The story's a lot more mature

The title is also a hilarious parody of other shonen anime titles. The first one being a parody of some crazy arc name. Disappears with the Dawn gets a lot of variations in anime, like "Dies with the Dawn" etc. If you get some crazy major character death, a lot of the time they'll get this crazy romantic dying with the dawn title

So I've done some calculations and I think, in-universe this anime aired 5 days a week instead of one day a week. It adds up with the time Hymeno became the queen as well, which was 15 years ago in-universe since Jeramie said that's when the series first started airing. If we assume that it aired 5 days a week, then roughly 20 in a month, 240 a year and it would take just around 15 years to air 3528 episodes. It would also make sense to air 5 episodes a week since the episodes are like a minute long.

In episode 11 Rita mentions poachers being in last week's episode, so I assumed that meant only one eps. But maybe they meant just one of last week's episodes?

And Rita wasn't even the target audience. It was created for Himeno. No wonder she's so greedy; she had a terrible role model.

They didn't. Ruffinn is saying that if you do the math, the episode count matches up with a 5/week schedule over 15 years. Which in turn matches that we know the series was created to inspire the orphaned Himeno 15 years ago.
